Pie Filling
  • 4 large peaches, peeled and sliced
  • 3 tablespoons gluten-free flour I use Bob's Red Mill
  • 1 teaspoon cinnamon
Topping
  • 8 tablespoons vegan butter or regular butter, softened When using vegan butter or cheese I use Miyoko's
  • 1 cup gluten-free flour
  • 1 cup coconut sugar
  • 1/2 teaspoon cinnamon

Instructions
  1. Heat oven to 365 degrees Fahrenheit
  2. In a bowl mix together the peaches and 3 tablespoons of flour.
  3. Pour mixture into a pie dish or baking dish.
  4. Sprinkle 1 teaspoon cinnamon on top of peaches.
  5. For the topping: In a separate bowl mix together the butter, flour, sugar, and cinnamon using a fork or dough blender. Will form a crumble.
  6. Place on middle rack in oven and bake for 30 minutes or until peaches are tender.
  7. Allow cooling for 20 minutes before serving.
