Heat oil in small skillet over high heat.
Add onion and season with salt and pepper. Saute 10 minutes allowing the edges to slightly blacken.
Heat stock in large pot over medium heat. Add carrot, corn, beans, sauted onion, and tomatoes (if tolerable). Salt and pepper to taste.
Bring to a boil and cover.
Cook for 20 minutes.
Add shredded chicken and cover. Continue to boil for 2-3 minutes and remove from heat.
Place desired amount of tortilla chips (crush with your hand) in each bowl.
Using a ladle spoon soup into each bowl.
Top with cilantro, avocado, and green onion. Serve hot and enjoy!
Your body is unique and your diet should be customized to your needs. If you can not tolerate the onion, beans, or tomatoes in this recipe simply omit them. Better yet, you can substitute with celery, butternut squash, or white beets. It's your soup so mix it up and enjoy!
